It is soluble in water, stable in aqueous solution, neutral. Slightly soluble in ethanol, almost insoluble in ether. Heating in an acidic solution is easy to decompose and loses its taste. Application Disodium-5'-Ribonucleotide (I+G) is a flavor enhancer which is synergistic with glutamates in creating the taste of umami. It is a mixture of disodium insinate (IMP) and disodium guanylate (GMP) and is often used where a food already contains natural glutamates (as in meat extract) or added monosodium glutamate (MSG). It is primarily used in flavored noodles, snack foods, chips, crackers, sauces, and fast foods. The dosage is about 2%-5% of MSG. It is called "strong MSG". In addition, it also has certain auxiliary therapeutic effects on migratory hepatitis, chronic hepatitis, progressive muscle atrophy and various eye diseases.
